  • 4 cups (10oz) broccoli florets, chopped

  • 1/2 cup diced red onion

  • 1/2 cup diced bacon

  • 1/2 cup sunflower or pumpkin seeds

  • 3/4 cup mayonnaise

  • 1/4 cup sweetener of choice (i.e. Swerve) -adjust to preferred sweetness

  • 2 tbsp apple cider vinegar

  • 1/2 tsp mustard powder

  • 1 tsp salt

  • 1/2 tsp lemon pepper (or regular pepper and lemon zest)


Instructions:

  1. In a large bowl, combine the broccoli, red onion, bacon, and sunflower seeds.

  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sweetener, salt, mustard powder, and lemon pepper to make the dressing. Let sit 5 minutes before whisking again to ensure sweetener has fully dissolved.

  3. Pour the dressing over the broccoli mixture and toss well to coat evenly.

  4. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.

  5. Serve cold and enjoy!
