Keto Tuscan Butter Salmon

Enjoy a flavorful and healthy meal with this keto fried salmon recipe. Made with fresh salmon, cherry tomatoes, heavy cream, and parmesan cheese, this dish is a perfect addition to any keto diet.

Ingredients:

  • 4 salmon fillets (6 oz each)

  • 4 tbsp unsalted butter (or avocado oil if preferred)

  • 4 cloves of garlic, minced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup heavy cream

  • 1/2 cup shredded parmesan cheese

  • Salt and pepper, to taste

  • Fresh basil, chopped (optional, for garnish)

Instructions:

  1. In a large skillet, heat 2 tbsp of the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Stir in the cherry tomatoes and cook until they are soft, about 5 minutes.

  2. In a small bowl, whisk together the heavy cream and parmesan cheese. Set it aside.

  3. In the same skillet, add the remaining 2 tbsp of butter and heat over medium heat. Season the salmon fillets on both sides with salt and pepper.

  4. Place the salmon fillets in the skillet and cook for 4-5 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

  5. Remove the salmon from the skillet and place it on a serving platter.

  6. Pour the cream and parmesan mixture over the cherry tomato mixture in the skillet and stir to combine. Cook until the sauce has thickened, about 3-5 minutes.

  7. Spoon the cherry tomato and parmesan cream sauce over the salmon fillets, spreading it evenly over each piece.

  8. Serve the fried salmon hot, garnished with fresh basil, if desired.
