Keto chicken soup

Servings: 4-6


Ingredients:

  • 2 tablespoons olive oil

  • 1 small onion, chopped

  • 2 celery stalks, chopped

  • 2 carrots, chopped (optional, as carrots are higher in carbs)

  • 3 garlic cloves, minced

  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

  • 1/2 teaspoon salt (or to taste)

  • 1/2 teaspoon black pepper (or to taste)

  • 8 cups chicken broth (unsalted or low sodium)

  • 2 chicken breasts or 3-4 thighs (about 1 to 1.5 pounds), cooked and shredded

  • 1 bay leaf

  • Fresh parsley for garnish (optional)


Instructions:


1. Preparation:

  • Prepare your vegetables by washing and chopping them.

  • If you haven't already, cook and shred your chicken breasts. You can do this by boiling them in water or broth until they are fully cooked (about 20-25 minutes), then shredding them with two forks.


2. Cook Vegetables:

  • In a large pot, heat the olive oil over medium heat.

  • Add the onions, celery, and carrots (if using) to the pot, and sauté for about 5-7 minutes until the vegetables start to soften.

  • Stir in the minced garlic, thyme, rosemary, salt, and pepper, and continue to cook for another minute until the garlic is fragrant.


3. Add Broth and Chicken:

  • Pour the chicken broth into the pot, and bring the mixture to a boil.

  • Once boiling, lower the heat to a simmer, and add the shredded chicken to the pot. Let it simmer for about 25-30 minutes or longer to allow the flavors to meld together. Note: The longer you can allow your soup to simmer, the better it will be - but you may need more broth if you plan to simmer for longer.

4. Adjust Seasonings:

  • Taste the soup and adjust the salt and pepper to your liking.

  • Remove bay leaf


5. Serve:

  • Ladle the soup into bowls, garnish with fresh parsley if desired, and serve hot.

6. Storage:

  • Store any leftovers in an airtight container in the refrigerator for up to 4-5 days or freeze for up to 3-4 months.
