Keto Broccoli Cheddar Stuffed Chicken

Ingredients:

  • 2 chicken breasts

  • 1/2 cup broccoli florets, chopped into small pieces

  • 2 tbsp cream cheese (softened)

  • 1/2 cup shredded cheddar cheese

  • salt + pepper to taste

  • 2 tsp cajun seasoning (or preferred seasoning of choice)

  • 1 tsp avocado or olive oil


Instructions:

  1. Preheat your oven to 400°F.

  2. Slice the chicken breasts lengthwise, making sure not to cut through to the other side.

  3. In a small mixing bowl, combine the broccoli, cream cheese, cheddar cheese, and salt and pepper to taste.

  4. Stuff each chicken breast with the broccoli and cheddar mixture, packing it in tightly. Use toothpicks to secure the opening.

  5. Drizzle the oil over the outside of the chicken before sprinkling over the cajun seasoning and rubbing it in gently.

  6. Place the chicken in a baking dish and bake for 25-30 minutes or until the chicken is fully cooked through (165F).

  7. Remove the dish from the oven and let the chicken rest for a few minutes before serving. Don't forget the toothpicks and slice the chicken breasts crosswise if desired.

  8. Serve and enjoy!
