Keto Broccoli Cheddar Soup

This creamy and delicious broccoli and cheddar soup is loaded with flavor and packed with healthy ingredients. With its velvety texture and sharp cheddar cheese, this soup is sure to warm you up from the inside out. So grab a bowl and get ready to indulge in this creamy, dreamy bowl of broccoli goodness!


  • 1 head of broccoli, chopped into small florets

  • 2 cups of chicken broth

  • 1 cup of heavy cream

  • 2 cloves of garlic, minced

  • 1/2 yellow onion, diced

  • 1 cup of shredded cheddar cheese

  • Salt and pepper, to taste

  • 2 tbsp butter

  • 2 tbsp olive oil

Instructions:

  1. In a large saucepan, heat the olive oil and butter over medium heat.

  2. Add the diced onions and minced garlic to the saucepan and cook until the onions are translucent, about 3-4 minutes.

  3. Add the chopped broccoli to the saucepan and stir to combine with the onions and garlic. Cook for 5 minutes, or until the broccoli is slightly tender.

  4. Pour in the chicken broth and bring the mixture to a simmer.

  5. Reduce the heat to low and let the soup simmer for 10-15 minutes, or until the broccoli is fully cooked and tender.

  6. Use an immersion blender or transfer the soup to a blender and blend until smooth.

  7. Return the soup to the saucepan and add the heavy cream. Stir to combine and heat over low heat until the soup is heated through.

  8. Stir in the shredded cheddar cheese until fully melted and combined with the soup.

  9. Season the soup with salt and pepper to taste.

  10. Serve the soup hot, garnished with additional shredded cheese and fresh herbs, if desired. Enjoy!
